The Pearl’s Harbor Salad
Ingredients:
- 2 oz. Citrus Salad Lettuce Blend
- 2 tbsp. Ricotta Salata cheese
- 2 oz. Red Wine Vinaigrette
- 4-5 pieces of avocado
- 1 oz. cucumber
- 1 oz. quartered Campari tomatoes
- 1 oz. Corn
- 1 tbsp rendered Bacon
- 4 Hard boiled and peeled eggs
- 1 tbsp Lemonette vinaigrette
- 1 oz. Croutons
- 1 tsp Parsley
- Shellfish pack
Directions:
- Marinate cucumbers and tomatoes in red wine vinaigrette and parsley before service.
- Combine dressing, avocado, cucumber, tomato, bacon, egg, corn, croutons, and ricotta. Toss in stainless steel bowl then season.
- Toss shellfish with lemonette, minced parsley, and season.
- Place salad in a bowl and add shellfish on top.
- Place remaining ricotta salt on top of shellfish
