Patatas Bravas
Ingredients:
4 Potatoes, cut
0.75 oz. Aioli
⅛ tsp. Crushed Red Pepper Flakes
Smoked Paprika (garnish as needed)
Parsley (as needed)
Instructions:
1. Take 4 oz. of cut potatoes and drop into a 350-degree fryer.
2. Cook until golden brown for 4 minutes.
3. Drain the excess oil.
4. Place into a stainless steel bowl.
5. Add aioli to the bowl and crushed red pepper flakes. Mix well.
6. Place potatoes into a skillet.
7. Sprinkle potatoes with paprika and parsley.
Aioli
Ingredients:
4 oz. Mayonnaise
0.5 oz. Garlic
0.5 oz. Smoked Paprika
0.5 Cups Water
0.5 oz. Lime Juice
Pinch of Salt
Instructions:
1. Place water, smoked paprika, lime juice, salt and garlic into a blender and
blend until emulsified.
2. Place the mayonnaise in a stainless steel bowl.
3. Add the emulsification to the mayonnaise and mix until smooth and well
blended.
4. Refrigerate.
